Trimming Down
As with gaining muscle, to lower your bodyfat percentage you must watch your diet and change your routine. Your diet must be a lot cleaner now because too many bad fats could make it difficult to reach your goal. Also, you want to be eating under your caloric maintenence. As for routines, doing a compound lift routine will burn the most calories possible. If your routine is not very strenuous you could add some cardio like HIIT, High Intensity Interval Training, to burn more calories.
Gaining Muscle
Gaining muscle is easier to do for some than others, but all people must follow the same process. The easiest way to make sure you will gain weight is to count how many calories you eat. Your diet is directly related to your weight gain, and your weight loss. There are certain foods that are better for you than others, but as long as you are eating about 1,000 calories over maintence you will put on muscle.
As for lifting, you want to focus on hypertrophy routines and other full body routines. These routines allow your muscles to be worked 2-3 times per week rather than only once and this effect will cause constant muscle growth throughout the week. Split routines, isolating one body part or muscle group on seperate days, are very useful for developing a great physique but a full body routine will really build a solid base for beginner lifters as well as teach them the most important compound lifts.

Natural by definition
The definition of natural bodybuilding depends on each individual. In most cases, it is only considered unnatural if you are using steroids or any other similar performance enhancing drugs. It is best to train naturally because natural bodybuilders usually get more credit for their accomplishment, whereas the general population tends to discredit the work of people who take steroids.
Natural bodybuilders tend to have a more aesthetic physique. This is because some people reach that point where they stop having nice physiques and start to have repulsive overly large muscle groups that make them less appealing.
